We LOVE Easter! It’s all about food, drinks, colour and yes, a few days off! 2022 is a great year to celebrate Easter because brunches are back! 

If you’re planning to throw a nice Easter brunch, there are a few cool things you can try this year and we’ve listed 7 ideas that would fit nicely on every kitchen table.

1. Use mason jars to pimp your table

Mason Jars have been a household name for many years but (food) bloggers got crazy with them about 1-2 years ago. It was all about filling up the jars with the most healthy superfoods you could find and post it on Instagram. Serve juice, coffee or food in it or pimp them with lights, paint or stickers.

2. Easter cocktails

Champagne at breakfast or brunch? Yeah, why not I say! It;s the best combination with fruit and you will bring an instant element of celebration to the table! You have a few options but let’s go for colour and make a fruity Mexican Pomegranate Mimosa:

Ingredients:
1 ounce orange juice
1 ounce pomegranate juice
0.5 ounce lime juice
1.5 ounce tequila blanco – 100 precent agave
2 ounces champagne
1/2 teaspoon agave, (optional)
Pomegranate seeds

Instructions
If using the agave sugar, shake vigorously with the orange juice to combine. If using the arils place 4-5 in the bottom of the glass. Pour the orange juice into a standard 6 ounce champagne flute and top with the pomegranate juice, lime juice, tequila, and champagne. Pretty simple!

3. Make the most colourful dessert, ever

Don’t eat this if you’re on a diet! I saw this on YOUTUBE and had to include this in my list! What is it? Marshmallow peeps (only available in Canada and the US, but you can use normal marshmallows), cream and chocolate. Yes lord. Check this video on how to make it!

4. Create your own Easter eggs

You can do this together with your guest to make your Easter brunch even better. Boil a bunch of eggs for about 8-10 minutes and let them cool down. Then start painting! I think they look best with white or gold paint or go crazy and make them look tropical with palm trees, flamingo’s and pineapples!

5. Carrot Cake Pancakes

I love pancakes and I love them even more if they are nutritious and healthy. Well, I got a nice recipe for ya!  Add 4 carrots (peeled and cut)  in a large pot and add cold water to cover. Bring to a boil over medium-high heat. Cook until they are tender and drain. Put the cooked carrots and almond milk in a blender and process until smooth. Add 2 eggs, vanilla bean seeds and orange zest. 

Whisk together buckwheat flour, baking powder, baking soda, cinnamon, and a pinch of salt in a large bowl. Pour the carrot mixture into the flour mixture and whisk until smooth. This may be covered and refrigerated for 1 hour before using. Use a non sticky pan and do not use butter or oil but take a piece of kitchen paper and add rub it into some coconut oil and wipe the pan with it a little. (if you use too much, you always ruin your first pancake!) Once finished, you can add some coconut yoghurt and walnuts.

6. Flowers, Flowers, Flowers

They bring you colour and happiness and it’s the icing on the cake for your Easter brunch. Wildflowers and indoor gardens are the flowers/plants of 2022. You can use eggs to decorate your flower piece or you can order a wildflower piece online like Bloomon. They hand pick and style the flowers and deliver it to your house every 2 weeks, month or just whenever you feel like having fresh flowers in your home.

7. Order Customised Cookies!

I’m sorry to say that these are only available within the Netherlands but it’s too good not to mention! Why not order your own personalized cookies for your Easter Brunch?
