18 Jan HEALTHY CAULIFLOWER BOWL, READY IN 25 MIN!
Eating right, staying active and taking care of our mental health is not easy at the moment. COVID-19 has changed our daily routines. Even now it’s even harder to resist the temptation to snack when we are feeling bored. I’m not sure how you are doing at the moment, but we have more cravings than ever!
My gym, BBB health boutique in Amsterdam, offers online workouts, private bootcamps and great recipes that make me feel good and happy so I take good care of myself during this lockdown. Feeling inspired, I prepared one of their recipes: The veggie cauliflower bowl. It’s super tasteful, easy to prepare, healthy, convenient, nutritious and filling. This vegetarian meal tastes just as good as it looks!
Ingredients for the Cauliflower Bowl:
• 1 cauliflower
• 1 zucchini
• tofu (as much as you would like)
• coriander (or parsley)
• 1/2 lemon or lime
• 2 handful of brown rice or 1 can of chickpeas
• feta cheese
• pinch of turmeric and cinnamon
• sesame seeds
• 1 avocado
• some ginger syrup
• coconut oil
• salt & pepper
How you make the roasted cauliflower bowl with tofu and veggies?
Drain the tofu and press it in a kitchen or paper towel. Preheat the oven on 250 degrees. Take a medium pan over medium heat, bring water to a boil. Add the rice and a large pinch of salt. Cook for 18 minutes. Or bake your chickpeas in coconut oil with feta cheese, ginger syrup, pepper & salt (only takes a few minutes). Chop your vegetables, including the cauliflower, small and put them on a oven plate. Toss with coconut oil, turmeric, cinnamon, pepper and salt and put it into the oven until they are crispy and brown.
Chop the tofu into cubes and toss with soy sauce, pepper and sesame seeds. Bake the tofu in a pan until the cubes are browned around the edges. Take a bowl, put the rice / chickpeas, tofu and vegetables in. Finally, toss with coriander or parsley and put avocado slices on top. Squeeze lemon or lime and you are ready!
