It’s crunchy, it’s nutty, it’s delicious, and it tastes even better when it’s homemade, right? As many of us took to baking and other crafts, it seems like the perfect time for me to share my tested and approved recipe for easy and healthy homemade granola.

Before I jump right into it let me tell you one of the reasons why making your own granola is the perfect project for both newbies and experienced aspiring cooks among us. Granola isn’t one of those baking recipes that requires precise measurements and a 45 steps strict method. You can really wing it and change it up based on what you have at home, what you like, or just where your creativity takes you. So feel free to play around with your mix-ins, give it more or less time in the oven depending on how roasted you like it; have fun with it!

Homemade Granola recipe

Ingredients for Homemade Granola
Makes ±750 grams (about 12 portions)

350g whole oats* (the larger the more texture it will give retain)
150g nuts (I use a mix of almonds, walnuts and cashews)
30g seeds (for example chia, sunflower or pumpkin seeds)
1 teaspoon sea salt
2 teaspoons cinnamon
100g melted coconut oil
100g maple syrup**
100g dried fruits (I use raisins and dried cranberries)
Optional: vanilla extract, chocolate chips, coconut flakes, lemon zest, whatever you like in your granola

* You can opt for gluten-free oats to make this recipe fit your dietary needs.
** Maple syrup is my favorite and has the advantage of keeping it vegan, but you can use honey or any liquid sweetener you like instead.



Preheat your oven at 180°C
In a mixing bowl, mix together the oats, nuts, seeds, salt and cinnamon. For the salt; fine sea salt is best, but if you only have regular salt that’s fine, just add a little less (say ⅔ of a teaspoon). At this stage, I also added the zest of a lemon for a little bit of fresh tang. Melt the coconut oil and combine it with the maple syrup or other liquid sweetener (add 1 teaspoon of vanilla extract too if you have some at hand) in a separate recipient.

Pour the wet mixture into the dry ingredients and stir until everything is coated in glossy sticky syrup.
On a large tray lined with baking paper, spread the granola mix evenly. Place in the middle of the oven to roast for 8 minutes.
Stir the granola and make sure it is spread enough so that there is maximum surface area exposed to the heat, but keep it tightly pressed together so it sticks and forms clusters. Bake for another 8-10 minutes or until it looks golden (keep an eye on it, it burns fast).

And finally…

Take out of the oven and DO NOT STIR until you let it completely cool down. Ideally let it rest for a few hours or even overnight. This is important if you want your granola to be nice and crunchy. Once cooled, add in the dried fruits and other optional mix-ins. Give it a stir so everything is equally distributed and place your granola in a jar or container. It’s ready!
