28 Apr RECIPE | TURNIP SOUP, THE FORGOTTEN VEGETABLE
Turnip is a (forgotten) vegetable, it has a sharp and radish-like taste. When cooked, the tuber is nice and soft and tender and has a slightly sweet taste. It is rich in calcium and vitamin C and very low in calories.
This mouthwatering plant-based soup will fill your soul in the best and nourish your body. This month sexy chef Neda is sharing her homemade turnip soup!
Ingredients Soup for 4
4 to 5 turnips small turnips.
1 large onion
2 cloves of garlic
10 g fresh ginger peeled.
2 small carrots sliced
100 gr snow peas
1,2 litre of vegetable stock
2 tbsp vegetable oil
1 tsp turmeric
1 tsp coriander seeds
2 tbsp lemon juice
pepper & salt to taste

Preparation method
Peel the turnips and cut them into 4 or 6 cubes. Cut the onion, garlic into even slices and the ginger in small wedges.
Put the oil in a stockpot, add the coriander seeds and the ginger, give it a stir to release the aromas. Then add the onions and cook down until soft. Now add the turmeric, garlic, turnips and carrots, fry for 1 minute on high heat. Pour the vegetable stock into the pan, let it simmer on a medium heat for about 20/ 25 minutes.
Meanwhile cut the snow peas lengthwise into thin strips. Put some aside for the topping. When the soup is nearly done, take out the ginger (you don’t want a big peace in your mouth while eating) then add the snow peas and cook it for about 2 minutes. They should have a bite to them. Add lemon juice, some salt & pepper to taste and top it off with the rest of the snow peas.
